Easy Brownies Made with Freshly Milled Flour

These easy brownies made with freshly milled flour are chocolatey with a crinkle top, have the perfect amount of sweetness, and absolutely melt in your mouth. As decadent as they are the freshly milled flour adds a little punch of nutrients that you can feel good about. These brownies are what I am “famous” for at my husband’s work and my go to dessert when I need a crowd pleaser.

One thing I love about these brownies is how easy they are to whip up. Don’t get me wrong, there is a time and place for making an in depth dessert, but these are quick and simple enough for a weeknight when you have a chocolate hankering. Using only using two bowls should make clean up a breeze!

Benefits of Using Freshly Milled Flour

There are so many benefits to using freshly milled flour – the main two in my opinion are the taste and the added nutrients. Using freshly milled flour will add a rich, complex, nutty, sweet flavor that blows the standard all purpose flour out of the water. Additionally, when you mill your own flour you end up using the entire grain kernel. This is important because keeping the bran and germ will add nutrients that are not found in processed white flours.

Such a crowd pleaser – I’m not kidding when I say these are my most requested dessert.

They freeze super well – Freeze these individually once cooled and then let them frost at room temperature. People will never know they aren’t fresh!

They’re healthyish These are 100% a dessert BUT you still get the nutrition punch from the freshly milled flour

Butter – The star of the show. Quality matters here. You’ll use one stick.

Chocolate Chips – I recommend semi-sweet.

Sugar – To help sweeten them perfectly.

Vanilla extract – this helps balance the sweetness and adds creaminess.

Instant Expresso – this isn’t to add coffee flavor, it really enhances the flavor of the chocolate

Eggs- needed to give the brownies structure and stability

Flour – you can use all purpose or freshly milled flour

Unsweetened Cocoa Powder – for the fudgey chocolate flavor

Salt – The only salt I use is Redmond’s Real Salt. Just don’t use table salt.

Baking Powder – This helps the rise.

How to Make Brownies with Freshly Milled Flour

Preheat the oven to 350 degrees and line a 8×8 aluminum baking pan with parchment paper.

Melt together the chocolate and butter in 30 seconds intervals in the microwave. Stir with a wooden spoon after each interval.

Once the chocolate and butter are fully incorporated and glossy stir in the sugar, vanilla extract, and expresso powder.

Next, you will need to whisk the eggs together in a separate bowl. I recommend whisking for about a minute, this is important to get great texture. Once they are nice and frothy stir the whisked eggs into the batter bowl.

After the eggs are fully incorporated add the dry ingredients – the flour (which you can mill straight into the bowl), cocoa powder, and baking powder. No need to whisk but you do want to make sure everything is fully combined.

Now you’ll want to add in the remaining 1/4 cup of chocolate chips, just give a quick stir.

Pour the batter into the parchment paper lined baking pan and pop in the preheated oven for 30-35 minutes!

Let cool and dust with powdered sugar for extra oomph!

Tips

  • The quality of your butter matters. I recommend grass fed butter for extra creaminess.
  • Again to harp on quality but you need to use good cocoa powder.
  • Make sure you only microwave the butter and chocolate together in 30 second intervals. Any longer could scorch the chocolate.
  • Underbake slightly if you like them gooey!
  • If you don’t have room temperature eggs but them in a bowl of warm water while you get to work on the brownies. They should be close to room temperature by the time you get to that step.
  • Use a food scale for the most accurate measurements.
  • Use soft wheat berries for the freshly milled flour.

I think that a gluten free all purpose flour would work very well.

Substituting vegan butter may work but I wouldn’t suggest coconut oil in this recipe.

Yes, but I would drop the oven temperate to 325 degrees and you may need to increase the baking time by 5-10 minutes.

You can buttttt it really adds depth the ultra chocolatey flavor.

Ingredients
  

  • 1 Stick Butter (113 grams)
  • 1 Cup Semi-Sweet Chocolate Chips (180 grams)
  • 3/4 Cup Sugar (150 grams)
  • 1/2 Tablespoon Vanilla Extract
  • 1 Teaspoon Instant Expresso
  • 2 Eggs
  • 1/4 Cup Freshly Milled Flour (30 grams of what berries)
  • 1/4 Cup Unsweetened Cocoa Powder (20 grams)
  • 1/2 Teaspoon Baking Powder

Instructions
 

  • Preheat the oven to 350 degrees F. Line an 8×8 aluminum pan with parchment paper
  • Melt 1/2 cup of the chocolate chips and butter together in 30 second intervals in the microwave. Stir after each interval.
  • Once smooth stir in the vanilla, sugar, and expresso powder
  • In a seperate bowl whisk the eggs until frothy. Stir the eggs into the chocolate mixture.
  • Grind the flour directly into the chocolate mixture bowl and add the cocoa powder and baking powder. Stir until just combined. Stire in the remaining 1/2 cup chocolate chips.
  • Spread the mixture into the parchment lined baking pan. Bake for 30-35 minutes. Once cooled dust with powdered sugar for extra oomph!
